Course for Chocolatier : learn how to know and recognize chocolate, in order to understand how to use it, from tempering to the composition of hydrated and anhydrous ganache, and will take you to deepen the techniques for chocolate bon bons and bars in policarbonate moulds. Day 1

At about 1.30/1.45 p.m. we will meet in the hall of the IRCA Academy where programmes and information about the course will be provided. At this time, we will take the opportunity to ascertain whether everyone has arrived.

At 6.00 p.m., guests will return back to the hotel where an evening meal has been organised at 8.30 p.m.
Anyone with their own vehicle can make their own way back to the hotel unless they have requested and confirmed the transfer service.

*For logistical reasons, early arrivals cannot be accommodated at the IRCA Headquarters: guests may check into the hotel from the morning of 17th June.

Day 2


For those that have requested the transfer service, we will meet in the hall of the hotel at 8.30 a.m. to leave for the IRCA Academy so we can begin the day’s course by 9.00 a.m.

Lunch will be served in the IRCA Academy restaurant at 12.30 p.m.

The course should finish by 6.00 p.m., and transfers from IRCA to the airport may be booked without the need to return to the hotel*. Just let the IRCA Team know, and they will contact our regular company: a driver will be waiting for you at the agreed time with which you can confirm the details (the transfer can be paid for by cash and/or credit card in the car).

* Anyone that uses this service may leave their luggage in the Academy’s cloakroom.

Our staff will accompany anyone back to the hotel if they have requested an internal transfer and do not have their own vehicle.

Anyone requiring transport from the hotel to IRCA is kindly requested to notify the Academy team, which will make all the travel arrangements for them.

IRCA pays for all costs relating to board and lodging for the days over which the course is held (hotel stay, transfers by coach to and from the hotel and IRCA, the evening meal on 17th June and lunch on 18th June). These costs do not include transfers to or from airports/train stations or any additional food or drink not specified herein.

In order to make it easier for guests to organise their travel arrangements, IRCA has the contact details for a local company with which it has arranged discounted rates for getting to the hotel and returning to the airport/station at the end of the course. Anyone wishing to use the shuttle to and from the airport/station is kindly requested to let the Academy team know and confirm the details as soon as possible by emailing [email protected] or calling 0331.284111. IRCA will advise our taxi service partner which will be waiting for you when you arrive to take you to your hotel. Please note that anyone that does not confirm their request will have to organise their own transport and therefore miss out on the discounted rates.

INCLUDED: all teaching materials, bed and breakfast at the hotel, the evening meal on 17th June, lunch on 18th June at the IRCA Academy Restaurant and all internal transfers.


BREAKFAST: The hotel will happy to provide breakfast in the bar area of the resort. There are several coffee breaks during the course for which buffets are arranged with fresh food made by the IRCA team.

EVENING MEAL: An evening meal has been arranged in a dedicated area at 8.30 p.m. on 17th June. Please note that if guests have any additional meals due to arriving early or leaving a day later, they are expected to pay for those meals before they leave.

IMPORTANT!!: If anyone has not yet informed us about food intolerances or allergies, we kindly request that you contact us as soon as possible at [email protected] so that we can best manage all aspects of the event. If guests have any specific needs or requests, could they please let us know when they check into the hotel to avoid any confusion during the evening meal in the hotel or lunch at the Academy.

Any extras which are not included in the above description (additional meals and/or alcoholic drinks with the evening meal) will be charged to guests, who are kindly requested to settle all bills when checking out from the hotel.
